I’m always looking for fun veggie side dishes to put on the grill to complement whatever main course I am making. Tomatoes, stuffed with blue cheese, grilled to melt and charred to perfection work perfectly with a nice steak. Throw in some fresh herbs and a dash of balsamic vinegar, and you have yourself the perfect grilled side dish.

[post_ads]Grilled artichokes can be a little work-intensive in the prep but they are so worth it! The grill adds so much flavor to the artichokes that you don’t really need a sauce. But I can't resist the chef's dressing. If you don’t feel like making the dipping sauce, the 'chokes are perfectly wonderful with a drizzle of olive oil, sea salt and fresh-squeezed lemon juice. Note: Baby artichokes are smaller and therefore require less actual cook time, which is an added bonus!

This is one of those recipes that I’m known for in my family. Why is grilled romaine my go-to side dish? It is quick and easy and yields flavorful results every time. Because the grill caramelizes the lettuce, there’s no need for added dressing, which makes it low in fat/calories and high in flavor! This recipe puts a South Florida spin on traditional guacamole with Florida avocados and tart Key limes. All ingredients are grilled, including the limes, which adds a nice char and smokiness to the dip. If you’ve never had Florida avocados, they are huge—one avocado would equal two Haas avocados. They are literally falling from the trees down here in South Florida in the summertime.
